JAMMU, Aug 17: A 12-day food festival being hoisted by Hotel KC Residency at The Terrace Skylounge, North West Frontier Food Festival for dinner began today.
The North West Frontier Province was a former province created by the British in their controlled territories in Indian Subcontinent. It was established in 1901 and dissolved in 1955, after eight years as part of the Independent State of Pakistan, which gradually became Khyber Pakhtunkhwa Province.
The cuisine of this region is generally defined by a simplistic style of preparation, involving large chunks of meat or vegetables, sparsely marinated and slow cooked in a Tandoor at high temperatures. Spices are used to the right amount so as not to overpower the dish, but to just remain preserved in the flavor of the final product. The buffet spread will feature authentic culinary delicacies close to hearts of North Frontier people, prepared and presented by Chef Kaushal Sharma and his team of expert chefs.
During the 12-day long festival, one can savour North West delicacies such as Lahori Chargha Boti, Murg Kabulee Tikka, Multani Chappli, Pakhteh, Multani Tawa Paneer, Doodhiya Kebab, Mushroom Ke Tikke, Tawa Aloo Chatkara, Kasoori Hari Gobi.
Though North West Frontier cuisine is similar to North Indian cuisine, North West Frontier food offers a vivid array of flavor combinations to choose from. One can liven up their senses and enjoy a gastronomical sojourn with a spread ranging from sweet caramelized onion relishes and burn of curry tamed by mild biryanis to sweetened desserts and much more.
Speaking on the occasion, Rahul Jandial, General Manager, Hotel KC Residency, said, “We wanted to trace the intricately interwoven cuisine that travels from the neighbourhood.
