SRINAGAR, Apr 16: A family of chefs in Srinagar’s old city is making unique pickles from traditional Wazwan dishes like Rista and Kebab, called Wazwani achar, adding a new flavour to the traditional cuisine.
This Ramadan, the demand for Wazwani achar has been particularly high, with the pickles selling out every day after ‘Zuhr’ prayers. The family from the Safakadal area of the old city is happy with the success of their venture, which employs around 15-16 staff members, including four family members.
They have been running their venture for three years now and have recently introduced their latest innovation: Wazwani achar, a collection of pickles made from Wazwan dishes like Rista, kebab, and Lahabi achar.
The response to their pickles has been overwhelming, with foodies from all over the region coming to try out the new flavours. Basit, who founded the initiative, says they started with just three varieties but have since expanded their range to include over thirty different types of pickles. “From mixed vegetable to mushroom, there is something for everyone to try,” he says.
Their pickles have become so popular that they now sell them year-round, not just during Ramadan. In addition to their Wazwani achar, Basit’s family also offers a variety of vegetable pickles, like Tomato, mushroom, radish, and collard greens.
While there are other pickle makers in downtown Kashmir, Basit’s family has taken it a step further by turning several Wazwan dishes into pickles. “One such dish is a special chicken and carrot dish that used to be served with Wazwan. We have turned it into a pickle, offering a unique twist on the traditional dish,” he says.
